The brief

A habit is won or lost in four minutes

Nobody chooses a cafe once. They choose it every morning, and the decision takes seconds. A slow queue, a barista who does not look up, a flat white that is not quite right two visits running, and the habit quietly moves down the street.

That makes consistency the whole business. The 7am rush and the 2pm lull have to feel like the same place, and so does the store three suburbs over that you have not stood in for a month.

Why it matters

The upsell you are not getting is the easiest money in the building

A cabinet of pastries at eye level and a promotion on the counter are worth nothing if nobody mentions them. It is the most common gap we find in cafe programs, and it is a training problem, not a product problem.

The same goes for the loyalty app you paid to build. Measuring whether it gets offered, and how well it gets explained when it does, is usually the difference between a program that pays for itself and one that sits there.

Queue to last mouthful
The room on arrival
Fascia, floors, counter tops, the beverage and food prep areas, cabinets, menu boards, music and temperature, and the toilets if you have them.
Acknowledgement and the queue
Whether waiting customers get a look or a word, how long the queue actually took, and the greeting when it is their turn.
What the team knows
A real question about the specialty range, and whether the answer was confident, accurate and useful enough to change the order.
Size, shots and the add-on
Whether size was asked, extra shots or a premium bean offered, and whether anything was suggested alongside the drink.
Timing, to the second
Wait to be served, beverage out, food out, and for drive-thru the intercom wait and the time from order to handover.
The cup itself
Presentation and latte art where it applies, temperature, taste, and whether the food arrived as ordered and looked fresh.
Loyalty and the app
Whether membership was asked about, and whether the benefits were explained well enough that a new customer would sign up.
Team presentation
Uniform, name badges, grooming, hair tied back for food hygiene, and whether the team looked like they wanted to be there.

What a cafe shop covers

Our shopper queues, orders, waits and consumes, exactly as a regular would. We time the queue and the wait, ask a real question about the specialty range to test what the team actually knows, and note whether anything was suggested to go with the order.

Every checkpoint is scored and weighted, and each section of the visit comes back with written commentary. Where you run a drive-thru we measure it as its own journey: intercom wait, audio clarity, the offer at the window and the time from order to cup.
